If I want to eat a lot of volume, I make sweet potatoes, eat lots of popcorn, or just load up on chicken breast. I can eat a ton of carrots with a small amount of a spread like hummus and it's very low calorie. Portion sizing becomes much less of an issue if you start structuring your cooking around the idea of high volume low calorie
Consider that 1500 cals may be too much of an aggressive deficit for you. You can get a lot of food volume for that but for a 320lb person who hasn't successfully dieted before, it could be a little rough at times. -boom chicka pop light kettle corn (ridiculously low in calories & high volume), 90kCal for 2.5 cups -yasso frozen yogurt bars (only 100 calories per bar and so rich, imo better than trash halo top), cookie dough is the best.
